Wisconsin to Table: Ernessi Farms

We’re using fresh sage from Ernessi Farms in our new Wisconsin to Table dish at Grey Rock! From now until April, you can try a grilled chicken breast over a bed of sautéed spinach that is topped with a sage cream sauce.
Ernessi Farms is based out of Ripon, WI and was started by two geologists, Bryan Ernst and Tim Alessi. It seems like all cutting-edge start-up companies begin in someone’s garage or basement, doesn’t it? That is exactly where Ernessi Farms got their start. In 2012, Bryan and Tim began designing a high tech system for growing plants – that wouldn’t use any soil – in Bryan’s basement. Six years later and Ernessi Organics is able to grow produce year round with their hydroponic growing system. For those who are unaware, hydroponics is the growing of plants without using soil.
