Organic Butternut Squash Featured in Grey Rock’s Newest Farm to Table

Showcasing November’s Farm to Table dish, Grey Rock in Green Lake, WI, features Olden Produce and their fresh, locally grown organic produce from Ripon, WI. The butternut squash will travel fewer than 15 miles from farm to table!
Olden Produce is a fourth generation family farm that is currently owned by Tracy and Richard Vinz who pride themselves in being a USDA Certified Naturally Grown farm. This means that they are 100% chemical free and still grow crops the way their grandparents did. On top of that, they are award winners, having received the 2012 Family Farm Defenders Beginning Farmer Food Sovereignty Award and the Frontera Farmer Foundation Award.
As they enter their 11th year in growing produce, they offer a flourishing plethora of different vegetables with over 75 varieties. You can get anything from organic butternut squash to gorgeous rhubarb.
They strive to offer an array of options during the entire growing season and to offer the freshest, most flavorful produce possible. They achieve this goal by harvesting at the optimal times each season, proper storage techniques and a distribution site to every community they offer their produce to.
You can try Olden Produce Farm’s fresh butternut squash in Grey Rock’s latest Farm to Table special. Enjoy seared scallops with an apple, cranberry and quinoa salad, and a butternut squash puree for $34. This dish is available through November 30, 2016.
