Grey Rock Features Fresh Wisconsin Fish in May Special

Grey Rock in Green Lake, WI unveils their latest Farm to Table feature, which showcases Aqua Terra Farms and their fresh, eco-conscious Arctic Char fish from Bristol, WI.
Schuyler and Brandon Pigott, founders of Aqua Terra Farms, began in a completely different industry. They ran a business that designed, developed and manufactured plastic products from recycled materials. Keeping in line with the philosophy of environmentally friendly sustainability, the two founded Aqua Terra Farms in 2009 after Schuyler went on a deep sea fishing excursion.
They decided to create their own fish farm that had state of the art equipment and raise the fish in a more conscientious way. They use only the highest quality and FDA approved ingredients for a diet specifically designed for their arctic char which achieves a natural looking and tasting fillet. They also pump the filtered water from their fish tanks to a manmade wetland where they grow their own wild rice.
AquaTerra’s goal is to supply arctic char so fresh, that the consumer will have that “just caught and cooked” taste experience from their local distributor.
You can try Aqua Terra Farm’s arctic char in Grey Rock’s latest Farm to Table special. The Arctic Char is seared to perfection and served with blistered tomatoes and shallots, along with an aromatic wild rice blend.
In May, Grey Rock is open for dinner Wednesday through Saturday from 5 to 10 p.m. The piano bar lounge opens at 4:30 p.m. and features live entertainment every Saturday from 7 to 10 p.m. Make your dinner reservations online or by calling 800.444.2812.
