Wisconsin to Table: Uncle Phil’s Mustard

With the new year, comes change. Grey Rock, Heidel House’s flagship restaurant will now be featuring a Wisconsin to Table dish, with an ingredient chosen from what the beautiful state of Wisconsin has to offer. For January, Grey Rock is featuring Uncle Phil’s Mustard, and their honey mustard.
The origins of Uncle Phil’s mustard date back to 1973 when President and CEO of Wisconsin Spice, Inc. – the parent company to Uncle Phil’s – Phil Sass was asked to create a duplicate for a certain Dijon mustard commonly associated with a butler and the elite.
After successfully duplicating this Dijon mustard, Wisconsin Spice, Inc. was asked to develop and manufacture another specialty mustard, this one a horseradish-based mustard. At this time, Sass began to think he was on to something and in 1980 Wisconsin Spice launched its own retail brand of mustard – Uncle Phil’s Polish Mustard.
Many other flavors followed, such as Uncle Phil’s Honey Mustard that Grey Rock is using in their new dish.
You can try Uncle Phil’s Mustard as a mustard cream sauce drizzled over a breaded porkchop, served with mashed potatoes. The special is available through January 31, 2017.
Grey Rock is open for dinner Thursday through Saturday from 5 to 10 p.m. The piano bar lounge opens at 4:30 p.m. and features live entertainment every Saturday from 7 to 10 p.m. Grey Rock also features a #HappyHour Thur – Fri; 4:30 – 6:30 PM that features a specialty charity drink by Bernie the Bartender.
