It’s sweet corn time here in Wisconsin! Our July Wisconsin to Table dish at Grey Rock features sweet corn from the Alsum family farm in Randolph, WI. The corn is used in a sweet corn relish that is served over seared scallops with cilantro lime cream and rice.

The Alsum farm was originally purchased in 1912 and has been passed down through the generations. For over half a century, the farm was run as a dairy farm. However, in 1976, they began to grow sweet corn to sell at the newly founded Dane County Farmers Market. Today, they grow a variety of fresh vegetables that can be found at farmers markets, roadside stands and in local stores.

This dish is available until July 31, 2018.
