Summer Menu Launches at Grey Rock

Inspired by fresh summer flavors and local agriculture producers, the Grey Rock summer menu will leave you licking your lips with a desire for more.

Amanda Fendryk, who has been a part of the Heidel House culinary team since June 2013, was a major player in creating new choices and writing the summer menu.

When asked her favorite item from the new menu, Amanda, without pause, said, “It has to be the Ahi Tuna, my baby. It was the first item I came up with!”

With a big smile, Amanda explained, “I found the recipe for the watermelon-mango Pico de Gallo, which tops the Ahi Tuna Steak, and just knew – I knew I had to find some way to incorporate that salsa into the Grey Rock menu.”

The Ahi Tuna Steak is a From the Waters menu item. This seared tuna is served over lime-cilantro rice and then topped with the watermelon-mango Pico de Gallo Amanda insisted on. Is your mouth watering yet?

And it’s not just the entrees that will be calling your name; check out the New Orleans Sundae! Indulge in grilled pound cake topped with banana ice cream and housemade praline caramel sauce. The combinations of sweet, warm, cold, fruity … oh, they’re just to die for.

In addition to creating bold, seasonal flavors and unique combinations, the Heidel House culinary team wanted to incorporate as many local agricultural products as possible. Grey Rock guests will notice vegetables and fruits from Soda Farms of Princeton as well as meats from area bison ranches.

These ingredients will be put together each night for a Farm to Table special, featuring products straight from the source.

During the final stage of approval, the Heidel House culinary team came together to practice plating each item, allowing everybody to become familiar with the various starters, soups, salads, entrées and desserts.
