Grey Rock Features Award-Winning Wisconsin Cheese in June Special

Grey Rock’s latest Farm to Table feature showcases Uplands Cheese Company of Dodgeville, Wisconsin and their award-winning Pleasant Ridge Reserve Cheese.

Pleasant Ridge Reserve Cheese is named after a land formation on the Uplands Cheese Company’s hilly, 300-acre dairy farm in Wisconsin’s driftless region, and truly represents an incredible standard of quality. This cheese is made only from the best milk that their cows produce, and only in May through October (when the cows are eating fresh pasture). Depending on the year and the yield of milk, they may make only a small amount of Pleasant Ridge Reserve Cheese. If they are unable to produce just the right quality of milk for the cheese, they will sell the milk instead.

This cheese is also the most awarded cheese in American history! It has won the Best of Show in the American Cheese Society’s annual competition three times, as well as winning the US Cheese Championships in 2003. Pleasant Ridge Reserve Cheese is the only one to have won both of the national cheese competitions.

Uplands Cheese Company is run by two families, Andy and Caitlin Hatch, and Scott and Liana Mericka. The two families spent many years as neighbors, farming separately. However, they partnered up to combine their farms and be able to manage them in a seasonal, pasture based system. The types of grasses that their new farm had for the cows to graze on produced unique flavors that they felt would go to waste if they didn’t take advantage of. From there, they began to create their own cheeses, and the rest is history!

You can try Uplands Cheese Company’s Pleasant Ridge Reserve Cheese in Grey Rock’s latest Farm to Table special. The Pleasant Ridge Cheese is warm and creamy in Macaroni & Cheese, served with a hot ham steak and peach compote, for $28.

From June 1 – 20, Grey Rock is open for dinner Wednesday through Saturday from 5 to 10 p.m. Beginning June 21, Grey Rock will also be serving dinner on Tuesdays.
