Farm to Table: Rushing Waters Fisheries

Rushing Waters Fisheries is Wisconsin’s largest trout farm, operating in Palmyra since the 1940s. Taking advantage of the natural spring water ponds in Kettle Moraine State Forest, their trout is raised naturally and chemical free.
On 80 acres of pristine forests and valleys, 56 ponds are fed with crystal-clear artesian spring water. These deep underground springs maintain a very cold water temperature ideal for producing healthy fish year-round.
They produce all natural, chemical-free trout grown without antibiotics and have proudly used sustainable farm practices since 1999. Their farm staff works in the ponds year-round, harvesting fish by hand to order. They are immediately processed on site in their all-new modern processing plant. The ultra-fresh and high quality fish are delivered to grocers, specialty stores and restaurants throughout the nation.
“I am always excited to see what our great state has to offer and even more excited to find places that have unique aspects”, said Amanda Fendryk, who began Grey Rock’s Farm to Table initiative. “Rushing Waters Fisheries is one of those places, operating on the edge of Kettle Moraine in natural conditions.”
You can try Rushing Waters Fisheries’ fresh trout in Grey Rock’s latest Farm to Table special. Savor pan seared trout served with a lemon dill butter sauce and aromatic multigrain pilaf, as well as chef’s choice of vegetables. The special is available through June 30.
Grey Rock is open for dinner Tuesday through Saturday from 5 to 10 p.m. The piano bar lounge opens at 4:30 p.m. and features live entertainment every Saturday from 7 to 10 p.m. Grey Rock also features a #HappyHour Wed – Fri; 4:30 – 6:30 PM that features a speciality drink by Bernie the Bartender.
