Farm to Table: Nueske’s
03 Apr, 2017
Founded in 1933, Nueske’s is currently a third generation family owned company that still stays true to Great-Great-Grandpa Wilhelm Nueske’s original recipes. They still import their spices and blend them by hand. They never use binders, fillers, extenders… or add water to create artificial juiciness and additional weight.
Each smokehouse is carefully grouped by product according to weight and size. With the perfect blend of time and temperature, meats are slowly smoked over glowing embers of sweet Applewood.
Instead of statistical random-sampling to estimate product quality, they assure perfection by inspecting products continually throughout the production process, individually tasting every batch. Assembly line production is NOT the Nueske way. Stability, patience, purity… these are the values that continue to give Nueske’s bacon, ham, poultry and sausage products their award-winning, signature smoked flavor.
You can try this in the Farm to Table dish; grilled chicken breast with Nueske’s applewood smoked bacon and whole grain mustard, served with garlic mashed potatoes and chef’s choice of vegetable. This dish is available April 1 -31, 2017.
